You can discover the Erdtree Bow in a treasure chest located in Leyndell, the Royal Capital. To reach it, start at the Erdtree Sanctuary Site of Grace after defeating Godfrey’s golden shade.
From the Site of Grace, head towards the balcony and ascend the tree trunk. This will take you to an upper balcony. Exit through the only door available and take an immediate left.
Jump down onto the roof below and then enter the upper floor of the Erdtree Sanctuary through the shattered window.
